Soak 2 cups rice and 1/2 cup urad dal separately for 4 hours then grind each to a smooth batter. Mix with salt and let ferment overnight.

Boil 2 potatoes until soft peel and mash them.

Heat oil in a pan add 1/2 tsp mustard seeds 1 chopped onion and cook until golden.

Add 1 green chili 1/4 tsp turmeric and mashed potatoes. Mix well and cook for 5 minutes.

Heat a flat pan and pour a ladleful of batter spreading it thin to make a dosa.

Add a spoonful of the potato filling in the center fold the dosa and cook until crispy.

Serve with coconut chutney and sambar.
