Boil 2 potatoes 1 cup cauliflower peas and carrots until soft and mash them.
Heat 2 tbsp butter in a pan add 1 chopped onion and cook until golden.
Add 2 chopped tomatoes 1 chopped capsicum 1 tbsp ginger-garlic paste and cook until soft.
Add 2 tbsp pav bhaji masala 1 tsp chili powder then add the mashed vegetables.
Cook until thick adding water as needed to adjust consistency.
Serve with 4 buttered and toasted pav buns
garnished with coriander and onions.
